Coconut and lime loaf recipe
We're very lucky to be given this delicious coconut and lime
loaf cake recipe from our Bexley and
Dartford Branch (pictured right).
We're sure you'll enjoy this tropical treat!
Ingredients
For the loaf
- 4oz self raising flour
- 4oz soft margarine
- 4oz caster sugar
- 1oz dessicated coconut
- 1 lime - juice and grated rind
- 2 medium eggs
For the topping
- 2 tablespoons of caster sugar
- 1 lime - juice and grated rind
- Dessicated coconut for sprinkling
Method
1. Grease 1 lb loaf tin
2. Place all cake ingredients in a bowl and beat well for about
2 minutes
3. Spoon into the tin, smooth and level
4. Bake for 45 mins at gas mark 4/180°C, until firm to touch
5. Allow to cool for 5 minutes
6. Remove from the tin for the topping
7. Mix together sugar and lime juice and spoon the mixture over
cake allowing it to soak in
8. Sprinkle with dessicated coconut and grated lime rind
